Cabernet Sauvignon & Pinot Noir (red)

Winemaking:

Harvest is done manually. The two grape varieties are undergoing pre-selection , vinified separately , fermentation is carried out according to characteristics of each grape variety. Cabernet Sauvignon is aged 6 months in French oak barrels.

Tasting Notes:

Complex aroma of ripe berries. Extremely smooth structure, full-bodied, fruity, good balance of acid and sweetness, soft tannins, ripe blueberries and cherries, hints of fresh land, minerals and a hint of vanilla.

Wine food pairings:

This wine combines well with meat dishes, especially beef and lamb. This aromatic wine is suitable to be served with meat from wild birds.

Pinot Gris & Traminer (white)

Winemaking:

Harvest is done manually. The two grape varieties are undergoing pre-selection , vinified separately. The grapes of Traminer variety are laid at low temperature of 8°C in order to retrieve their rich aromatic complex, while those of Pinot Gris are pressed gently, the goal is to avoid the must becoming pink in color. For both varieties controlled fermentation is applied at 14-17°C.

Tasting Notes:

Dry white wine with a bright straw yellow color. Pure expressive flavor with aftertaste of ripe apples and roses, complex wine with great character.

Wine food pairings:

This wine combines with seafood salads, pasta, fish and crustaceans, garnished with risotto. Perfect with white meat and boiled or baked fish and soufflés. Serving temperature: 10°-12 °C.
