Merlot
Winemaking:
The harvest is done manually. The grapes are sorted out, stemmed and separated from the clusters. This is followed by prefermentation cold maceration. The alcoholic fermentation takes place in stainless steel tank.The malolactic fermentation takes place in tank.
Tasting Notes:
This Merlot showcases the richness of Bulgaria’s terroir with a deep ruby-red hue and vibrant violet reflections. On the nose, ripe black cherries, plums, and wild strawberries are complemented by subtle hints of vanilla, sweet spices, and Bulgarian oak, with delicate earthy undertones. The palate is velvety and balanced, offering flavors of juicy blackcurrants, red berries, and whispers of cocoa and clove, underpinned by a gentle minerality. Medium-bodied with smooth, integrated tannins, it finishes with lingering ripe fruit and a touch of spice.
Wine food pairings:
A perfect match for roasted lamb, cheese, or hearty vegetable stews.
Chardonnay & Sauvignon Blanc
Winemaking:
The harvest is done manually. The grapes are stemmed and separated from the clusters. The maceration is performed at a low temperature. Separation of solid particles and clarification of the grape must follow. The alcoholic fermentation takes place in stainless barrels at low temperature.

Our Chardonnay & Sauvignon Blanc blend is a harmonious expression of Bulgaria’s vibrant winemaking traditions, showcasing a bright straw-yellow color with greenish reflections. The nose opens with elegant aromas of citrus fruits, green apple, and white peach from the Sauvignon Blanc, intertwined with creamy notes of vanilla, honey, and a touch of toasted hazelnut from the Chardonnay. On the palate, it is fresh and lively, with the Sauvignon Blanc contributing crisp acidity and herbal nuances, while the Chardonnay adds depth, roundness, and a silky texture. The finish is clean and well-balanced, with lingering hints of citrus zest and a whisper of minerality.
