Extra Dry Sparkling Wine

Winemaking:

The harvest is done manually. The grapes , stemmed and separated from the clusters. This is followed by prefermentation cold maceration. Following is the separation of the hard parts and filtering of the grape must. The alcoholic fermentation takes place in stainless steel fermenters.

Tasting Notes:

Color is straw-yellow with golden nuances. Aroma is intense, elegant and fine, the nose shows fruity aromas (grapefruit, lemon and white fruits), salvia and brioche in the finish. Taste is complex, fine, fresh, dry, intense and pleasant. 

Wine food pairings:

Paired well as an aperitif, with fish dishes, white and yellow cheeses.
